Recipe Day!!! Stupidly Easy Pasta Sauce and Peach Crisp

The boys and I spent the morning at Lake Highlands Spray Park, but I didn't take any pics, for some reason! It's probably because I'm waiting for the new camera I want for my birthday!!!! So, I'm doing recipes, today, because my rickety camera is safe for indoor pictures.

First is the Stupidly Easy Pasta Sauce.

Here it is, copied in it's entirety from the original post on a message board, where I shared it with friends.

I had this journey on which I had embarked to find Doug's favorite pasta sauce. I tried jars, cans, I made sauce w/ fancy ingredients, I used plain tomato sauce w/ only Italian seasonings, I literally tried EVERYTHING, except this.

This is it.

1 lb ground beef
1 c. shredded carrots
2/3c chopped onion (1 whole small onion)
1 clove garlic, crushed
1 t basil leaves, crushed (1/4 c. chopped fresh)
1 t oregano, crushed (1/4 c. chopped fresh)
1 beef bouillon cube (1 t beef base)
1 t sugar
1/2 t Italian seasoning
2-15oz cans tomato sauce

brown meat in heavy pan. drain and rinse meat (but not the pan) return to the pan and add onion, garlic, carrots. Cook until onion is translucent. Add remaining ingredients and simmer 20m. Serve over pasta.


Sauce over whole wheat rigatoni, in our fancy IKEA bowl. It's fancy because it's the only one without a chip in it.



Next is my rave on Oroweat's Sandwich Thins.

These are so good!! Nice and thin, but super soft, and are whole grain with about 5 g of fiber and 100 cal per serving!! We use them for burgers, for PB&J, hummus and lettuce, ANYTHING!!
And, no high fructose corn syrup, for those of you who avoid it.



Here they are, as garlic toast. YUM!!!!



The next recipe is Peach Crisp

I was sad to use my last canned peaches from 2008, but they made this super yummy crisp!!

I used:
Filling
1qt and 1 pt peaches in light syrup (maybe two cans in lt syrup??)
2T butter, cut into small pieces
1/4c cornstarch
1/4t nutmeg
1/4t cinnamon

I put the peaches, including syrup, into a baking dish. I used a deep-dish Pyrex pie pan. If using canned peaches, I would drain one of the cans totally, then pour them both into the dish.
sprinkle all remaining ingredients on top of the peaches. Make the topping, next.


Topping:
1/2c packed brown sugar
1c rolled oats (instant or quick are fine, it doesn't matter)
1t cinnamon
1/2t nutmeg
1T butter, softened.

Use a fork or pastry blended to cut all the ingredients together until pea sized crumbs form, then sprinkle on top of filling.



Bake at 375 for 35-40 minutes, or until the top starts to brown.

I bought those Orowheat sandwich thins at Costco yesterday after tasting a sample, and they are AWESOME! I used them for my burger last night and can't wait to use them for sandwiches.
