A Monday Recipe: Cheese Scones
I've been making these for a long time, but I don't make them often: they use a lot of butter and cheese! BUT they are SO good! And, pretty easy.
Ingredients:
3c flour
1/2t baking soda
1 1/2t baking powder
pinch of cayenne
1t kosher salt
1 stick, plus 1T cold butter cut into 1" cubes
1/2 lb cheddar, in 1/2" cubes
1/2c. heavy cream
1c buttermilk
1 egg beaten
Preheat oven to 375F and line a cookie sheet with parchment.
Measure all dry ingredients (except cheese) together, and then cut in the cold butter until pea-sized. Stir in the cheese cubes. Make a well and add milks. Stir just until moistened and ingredients come together. Turn out on a floured board. Shape into a 6x9 rectangle. Cut in half lengthwise, then into 6 even triangles on each side (12 triangles). Place on baking sheet and brush with the beaten egg. Bake 30 minutes.
In the oven, on parchment. They start off rather orderly-looking.
While baking, the cheese melts, making these little pockets of cheese the explode and melt onto the parchment. Use a sharp knife to cut them apart before moving to a rack to cool.
MMMM! I served these Sunday, with homemade chicken noodle soup.
