A Monday Recipe: School Lunch Brownies

I don't make any desserts for William to take to school in his lunch, but the girls used to always take a dessert and the most often requested were chocolate chip cookies and these brownies.  These are not low-cal, low-carb, low-fat, gluten free, or paleo but they are REALLY yummy!



Ingredients:
1c butter
2c sugar
4 eggs
1/2t salt
1c cocoa
1t vanilla
1 1/4c flour
opt. 1/2 bag chocolate chips (not necessary at all, I don't buy chocolate chips for these, but I'll use them if I have them)

Preheat the oven to 350F, grease a 9x13 pan.
Melt the butter and add to bowl (I microwave my butter in a large glass batter bowl)
Mix in the sugar well, then add the eggs. Beat on medium for about 1 minute. Stir in the salt, cocoa, and vanilla.

 When well combined, stir in the flour. Stir in the chocolate chips here if you're using them.
 This makes a VERY thick batter. (mmmmm!)

Pour into your prepared pan and bake 20-25 minutes. In my oven, perfection is reached at 22m. Do not over-bake these: the edges should be dry and crusty, as should the top, but it's ok if the middle is still a bit mushy.


Cool on a rack at least 10 minutes before cutting.  I would cut these into 15 pieces and put in individual ziplocks for lunches. Or, you could just eat them all at once. :)
