This is one of my fav salads, but it's usually too fatty for me to eat regularly, but recently I was inspired to fix that.
2 heads of broccoli, florets cut off. (about 5-6c of florets)
1/2 of a medium onion, diced
1c vegan mayo (I use Happy Herbivore's recipe for vegan mayo)
2T white wine vinegar
1/4c chopped raw cashews (or other nuts you like)
bacon bits to taste (I used about 2T), use whichever kind you like. I use Frontier brand.
Whisk together the mayo, sugar and white wine vinegar. Stir in raisins, broccoli, and onion. Refrigerate 2 hrs. Stir in cashews and bacon bits before serving.
