My New Favorite Lunch: Sausage and Sweet Potato

I've been looking for sort of healthy, fast, satisfying (has to be warm or hot food for me to feel satisfied) meals that didn't have too many carbs or grains in it. I threw this together after seeing some similar recipes on other blogs, except this was super simple.


I bought my mild Italian sausage at Newflower Farmer's Market (which is a grocery store...go figure) for $1.99/lb. They have the ingredients of all of their sausages posted, so you can check that the have no fillers or look for allergens or whatever. The sausage I bought has pork and spices. That's it.





Ingredients: (makes one BIG serving, or two small if you serve salad)
preheat oven to 400
1 fresh Italian sausage link, casing removed.
1 med sweet potato, diced (5" or so)
1/4 of a medium onion, diced (I used red, but I'm sure anything will be fine)


Put the vegetables in a glass baking dish. I used a pie dish. Crumble the fresh sausage over the top. Bake for 20 minutes, stir to evenly brown the sausage, bake 10 more minutes. EAT!!

Yummy!

so, then the fat and spices in the sausage are all you need, smart! but weird. weird, because i am italian and eating an italian sausage with a sweet potato seems...weird. but i am intrigued enough to try it, i think!

ha ha! We, of German descent, are quite fond of the combining of sweet with savory flavors. What a marriage of cultures this dish is!
