A Monday Recipe: Black Bean Hummus

O.M.G.  This is unbelievably good. SO YUMMY!

Yes, I know it's not Monday, but I don't really  have Tuesday recipes, so it's going to be a Monday Recipe anyway.





Black Bean Hummus. Serves 1 (ok, probably 4...but I can eat it ALL!!)

1 can black beans (or 1 1/2c cooked black beans, according to THIS dry to canned to cooked beans conversion chart)
2T tahini (I made my own, keep it in the fridge, but any will work.)
2T lemon juice (fresh or bottled)
2t ground cumin
salt to taste


Put all in food processor and process until smooth (or desired texture, if you like chunky)



Serve with BAKED TORTILLA CHIPS!!

Preheat oven to 400*

4 corn tortillas
cooking spray
salt
opt: garlic powder, chili powder, etc.

Stack up tortillas and cut into 6 wedges (in half three times). Spread evenly over a baking sheet. Spray lightly with cooking spray (this is to make the seasoning stick...if you leave out the salt and seasoning, don't bother with this step). Bake 10 minutes, or until edges are beginning to brown and crisp. Remove from cooking sheet to cooling rack. The rack is imperative in the crisping processes. EAT with yummy black bean hummus!!


Eat up! This is my new fav snack, and it's ready in a jiffy!
