I got two small butternut squash in my produce co-op last week and couldn't wait to eat them! I usually try to eat the more perishable items first, but I love squash! I don't have as many recipes for it as I'd like, though. I'll be happy to take any suggestions!
- 1 (2 -3 lb) butternut squash, peeled and seeded
- 1/4c Parmesan cheese, grated
- 1/4c seasoned bread crumbs
- 2T fresh thyme leaves, finely chopped
- 2t butter
- salt
- black pepper
Cut the peeled and seeded butternut squash into 1" cubes or chunks and place them in to a well buttered (or, use cooking spray) baking dish. Season the butternut squash generously with black pepper and a little salt.
Mix the grated Parmesan cheese with the fresh bread crumbs, and chopped thyme and then sprinkle over the top of the butternut squash.
Dot the butter all over the cheese/bread crumb topping.
Bake it in a pre-heated oven, 400F for about 35 to 45 minutes, until the butternut squash is soft and the topping is golden brown.
I served mine with a some goat cheese stuffed roasted figs. It was the best dinner EVER!! I still have one more squash left to use, so I'm on the look out for more yummy recipes! Do you have one to share?
