Yummy! Baked Greek Shrimp! Recipe






This is SO good!!!

1m onion, chopped
2 garlic cloves, minced
3T olive oil
1/2t pepper flakes
1/2t cinnamon
2T dill (I ground up dill seed and used a bit less)
1/4t allspice
1- 28oz can tomatoes un-drained.
1t sugar
1 1/4lb shrimp (I used 1lb..who buys 1 1/4lb of anything??)
3T grated Parmesan
1/4c grated mozzarella

Preheat oven to 375. Saute onion and garlic in oil on medium. Add spice and cook 30 seconds. Add tomatoes w/ their juice and sugar. Simmer uncovered, stirring occasionally, until slightly thickened; about 20 m. Remove from heat. Salt the shrimp (1 t sea salt) and add to sauce. Pour into a shallow baking dish, top w/ cheeses. Bake 18m.

You could also top this w/ feta instead of the other cheeses. I prefer feta, but Doug hates it. These cheese are pretty yummy on it, too.

Serve over rice and with a delicious bread (like mine!!) to mop up the fantastic juices this dish makes as it cooks...so good!! Don't forget your salad with birthday dressing!!

The boys didn't get full on their breakfast of oatmeal and raisins, and yogurt this morning, so they busted into William's lunch while I was upstairs getting my shoes.


They heard me coming and put it back in the bag, as if I wouldn't notice.

Ummmm, this is not quite how I packed it. And where are the chips and raisins??

that looks amazing!! yum! what kind of rice? Also, I love the way the packed the lunch to hide the evidence. :)

Bianca, I just made plain brown rice and served the shrimp over it.
