Cherry Limeade cupcakes with cherry cream cheese frosting, for Emily's birthday!
William is always willing to help with cupcakes!
1/2 cup soft butter
3/4 cup sugar
2 T grated lime zest
3 T lime juice
3/4 c yogurt
1 & 1/2 c flour
1 t baking powder
1/2 t salt
Preheat oven to 350 degrees.. Beat the butter and sugar together. Beat in eggs, one at a time. Mix the lime zest and juice into the yogurt. In a small bowl, whisk together the flour, baking powder and salt. Add the flour and yogurt mixtures alternately, beginning and ending with the flour. Pour into lined cupcake pans. Divide evenly among the 12 liners, and bake for about 16 to 18 minutes. Remove cupcakes from pan and cool on a rack.
The frosting is my cream cheese frosting, with cherry syrup added (from the maraschino cherries jar). I frosted, sprinkled with red sugar and topped with a cherry. Delicious!
