A Monday Recipe: Orange Scones


This biscuit-like quick bread is great for breakfast or brunch, served with orange butter, or as a slightly sweet complement to a savory main dish.




Orange Scones

Preheat oven to 400f
2c flour
3T sugar
2 1/2t baking powder
2t orange zest
1/2c butter
1/2c chopped and supremed orange slices
1/4c milk
1 egg
1T sugar

Lightly grease cookie sheet (I used parchment). In a large bowl, combine flour, 3T sugar, baking powder, and orange zest. Cut in butter until coarse crumbs. Add orange, milk and egg. Stir with fork until mixture leaves sides of bowl and soft dough forms. Turn dough onto a floured surfaced. Knead 10 times. Pat into a 6" circle on the cookie sheet. Use a floured knife to cut into 8 wedges. Bake 20m or until center tests done.

For a brunch or breakfast, serve with orange butter.
Orange Butter
1/2c butter, softened
2T orange marmalade
Beat until lightly fluffy and stir in marmalade.


I served mine without butter with a great potato soup (see my "cream of anything soup" recipe)
