A Monday Recipe: Garlic Biscuits (Basic Biscuits PLUS!)


I have a basic biscuit recipe that I use for so many things: pigs in a blanket, mini-pizza crusts, and, of course, BISCUITS!! The cool thing about a good biscuit recipe is that you can change it up to suite your mood or your meal!!



Biscuits

2c flour
1T baking powder
1t salt
1/3c butter or shortening
2/3c milk or buttermilk OR 1 c yogurt or sour cream.

Combine dry ingredients. Cut in the shortening or butter (with pastry blender or fork). Stir in the liquids with a fork until all the dry ingredients are included. Turn out on to a floured board and knead 10 times. Pat into a flattened mound about 3/4 inch thick. Cut into 6 biscuits (depending on size of biscuit cutter). Bake at 425 on an ungreased baking sheet for 20 minutes, or until lightly browned.


I served my garlic and Romano biscuits with a delicious asparagus soup I made using my cream of anything soup recipe.  For the asparagus version, I used tarragon instead of thyme, and it was the brightest, freshest soup...delicious! It was so good with those biscuits!

Extras: for garlic biscuits, I add 1T garlic powder. For these specific ones, I add 1/4c grated Romano cheese, too. Some other great things to add inn are crumbled blue cheese, shredded cheese, herbs, etc. Try your favorites.

  2. When you use biscuit dough for mini-pizzas, do you cook the dough at all first, or put on toppings then bake?

    I roll the dough really thin (like you would for cookies), cut it with a biscuit cutter, place on cookie sheet, add toppings at bake until the cheeses melt/toast. :) it's so easy, I make these for birthday parties! You can whip out a ton of them in 45 minutes or so.
